What's a Coolship?
Using a centuries-old Belgian brewing tradition, we're able to achieve a complex, and delicious, style of beer with the help of wild yeast floating in the Maine air.
This spontaneously fermented beer gains a unique profile thanks to its time in bourbon barrels. After allowing the wort to rest overnight in our coolship—a room-sized rectangular pan—we ferment and age it in bourbon barrels rather than the more traditional French oak wine barrels. Coolship Clermont features a bright copper hue and aroma of oak, malt, light funk, and citrus. Its mildly tart flavor profile contains notes as varied as tropical fruit, lemon, and bourbon. Though the barrels come from Clermont, Kentucky, the beer’s soul is pure Maine.
Grains: Pilsner Malt, Raw Wheat
Hops: Aged Whole-Leaf Hops
Spices/Other: Aged in Bourbon Barrels
Yeast: Wild
Serving Temp: 40-50°F
