Buckle up, because the story behind our honeyberry fruit wine is a doozy:
This wine was made using honeyberries from Allagash View Farms in Fort Kent, ME. The berries were crushed, pitched with our house cider yeast strain, and underwent a maceration fermentation for five days. We then pressed the berries and finished fermenting the wine in stainless vessels. After blending it with apple cider, the blend was aged the blend in unused bourbon barrels. The barrels were then blended with an oak barrel of naturally fermented cider from the 2022 and 2023 harvests.
Long story short, this still, uncarbonated wine is an oak aged blend of honeyberry wine and apple cider.

Yeast: Bioprospected from Our Own Coolship Barrels
