What's a Coolship?
Using a centuries-old Belgian brewing tradition, we're able to achieve a complex, and delicious, style of beer with the help of wild yeast floating in the Maine air.
This blend of spontaneously fermented beer is aged on locally grown honeyberries—a fruit with a flavor profile that lands somewhere between grape, blackberry, and cherry. First, the beer is brewed with a traditional blend of barley, raw wheat, and aged whole-leaf hops, then left to cool in a large shallow pan called a coolship. Overnight, the hot, unfermented wort mingles with wild yeast and souring microbiota in the Maine air. After fermenting and aging in French oak wine barrels for over two years, we add honeyberries and let the beer rest for an additional four-to-five months. The resulting ruby red beer blends balanced and complex notes of fresh raspberry, blueberry, concord grape, oak, and light funk, all with a tart, refreshing finish.
