What's a Coolship?
Using a centuries-old Belgian brewing tradition, we're able to achieve a complex, and delicious, style of beer with the help of wild yeast floating in the Maine air.
Using a traditional Belgian brewing process, we fermented this beer with wild yeast and microbiota found in the air around our brewery. We then blended together multiple ages of spontaneous beer, and aged that entire blend in apricot brandy barrels. This unconventional step lent a hint of toasty vanilla and apricot to the signature notes of tart stone fruit and light funkiness found in our Coolship beer.
Grains: Pilsner Malt, Raw Wheat
Hops: Aged Whole Leaf Hops
Spices/Other: A blend of One, Two, and Three Year Old Batches
Yeast: Wild
Time to Fermentation: Three years
Serving Temp: 40-50°F
Ideal Within: Four years
