Spontaneously Fermented Ale Aged on Grape Pomace

After a night of gathering wild yeast in our coolship—a large, open steel vessel—and then aging in oak barrels for up to three years, we rest this beer on grape pomace. The pomace is made up of the skins, stems, and seeds of La Crescent grapes that have already been pressed by winemakers. The result is a multi-faceted beer, filled with notes of apricot and oak, a hint of funk, and an enticingly vinous quality from the grapes.
