Coolship Balaton

Spontaneous Ale with Cherries

Coolship Balaton is spontaneously fermented in oak wine barrels then aged on Maine-grown cherries. After brewing, wild yeast finds its way into the wort as it cools overnight in our coolship—a traditional Belgian brewing vessel resembling a room-sized baking pan. The beer then ferments in oak barrels for up to two years. Near the end of aging, we transfer the beer onto two-pounds-per-gallon of Balaton cherries. In both the aroma and flavor, cherry, oak, and spice play leading roles, while fresh fruit contributes the beer’s red hue. Coolship Balaton finishes dry, rounding out its invitingly tart and complex flavor.

Sour Beers

Tartness can be found in a wide variety of beers—and can be added to beers in a wide variety of ways. You’ll find sourness in beer from souring bacteria, from fresh fruit, and sometimes from wild microflora floating in the Maine air.
