We brewed a wheat beer and cooled it in our coolship, inoculating it with local microflora in the process. For a fall-friendly twist, we added local apples to the coolship and blended the spontaneously fermented beer with our house-made cider before aging it in a concrete fermentor. Featuring aromas of stone fruit and green apple, the beer’s mild sourness contrasts its minerality and subtle earthiness to reveal a sumptuous spectrum of flavor.
